Gluten free barbecue
No summer is complete without a delicious garden barbecue, and more and more of us are incorporating fish and veg into our BBQ dishes. Of course, getting the right blend of side dishes like salads, sauces, dips and bread is as important as ever.
Meat, fish & Co.
It doesn’t matter if you’re going with beef, pork or chicken, if your guests prefer steak, sausages or chicken skewers... the meat is the integral part of all barbecues. The basic rule in case of celiac disease, gluten intolerance and wheat allergy is as follows: Be careful when you’re using pre-marinated variations! This is because there’s always a risk of contamination or gluten being part of the marinade.
Meat and fish should be purchased separately and be spiced at home. When using sausages you should keep in mind that they should be marked as gluten free before buying. In order to avoid contamination with grilled food containing gluten, it’s recommended that you use aluminium shells as well as a separate barbecue tongue when using the grill.
Gluten free tips: For homemade marinades, mix oil together with spices to your own preference and let meat or fish marinade for several hours. When using spice mixes and seasoning salt you should keep in mind that they should be marked as gluten free.
Meat isn’t the only aspect of a barbecue you should be thinking of. Vegetarian skewers, corncobs, barbecue cheese and baked potatoes are also very popular. Even if there’s no meat, you must remember: Home made is guaranteed gluten free. Vegetables such as bell peppers, onions, courgettes and aubergines are particularly suitable for skewers and can be spiced according to your taste. Baked potatoes should be first precooked, put on the grill for a short amount of time or directly into the coal for a couple of minutes. When using tofu sausages etc. there is an increased risk of contamination. For this reason, always make sure you’re using products marked as gluten free.
Gluten free tips: For home-made barbecue cheese, put one slice of feta on a piece of aluminium foil, sprinkle it with olive oil, add Italian herbs and dried tomatoes and close firmly.
Gluten free side dishes
Salads are a classic side dish for barbecued food and there are many gluten free recipes. Lovers of pasta salad should check out Schär gluten free noodles . There are lots of different ways to prepare potato salads, but whether it’s with mayonnaise, broth, vinegar or oil, remember that - home-made is the best way to guarantee it’s gluten free. It’s also important to mix all other dressings by yourself.
Gluten free tips: In order to get a light pasta salad with absolutely no gluten, mix gluten free pasta, tomatoes, mozzarella, fresh basil and a balsamic dressing and leave in a cool place.

Gluten free tips: To prepare a herb baguette, make several diagonal cuts in the bread and fill them with garlic, pepper or herb butter according to your personal taste. Turn them over several times when on the grill to make sure it doesn’t burn.
- Sauces & Dips
Sauces, dips and chutneys are guaranteed to be gluten free if you prepare them by yourself, which is worth remembering because most ready-made barbecue sauces often contain wheat starch. It’s also important to always keep an eye on the label when using products such as ketchup, sauces with curry powder, seasoning sauces or soya sauces. A basic sauce made of mayonnaise, spicy mustard, tomato paste, salt and pepper can easily be refined with fresh herbs, such as chives, parsley, dill and marjoram, depending on your taste. For those who like it sweet and sour, a fruity chutney made of apricots or mango can be the perfect dip for a barbecue. And if you need a little more kick, just add some chilli to spice it up!
Even desserts can be prepared on a grill, for example fruit skewer made with strawberries, bananas and pineapples. They are guaranteed to be gluten free. You should be careful with ready-made ice creams as well as with ice cream sauces.
